Constantly preparing meals and doing dishes at home during this time of social distancing can really get to be too much, so it’s a great change of pace when you can easily make an entire, delicious meal using just a 13” X 18” sheet pan or a cookie sheet. Just preheat the oven to 400 degrees, cut up your ingredients (small pieces cook faster), and cook for 20-30 minutes or so and voila!
Start by picking your protein source, add some cut up veggies, olive oil, and build your flavors with herbs and spices. Always add more veggies than you think you need since they shrink quite a bit during high heat cooking.
Here’s one example of an easy and delicious sheet pan meal that is quick to prepare and clean up is a breeze:
● Roasted salmon with cherry tomatoes—Place salmon fillets or steaks on the sheet pan and surround with halved cherry tomatoes. Drizzle with olive oil, sprinkle with salt and pepper and roast in a preheated 400 degree oven for 10 minutes. For extra flavor try caramelizing the cherry tomatoes by cooking them first for twenty minutes before adding the salmon to the pan for ten minutes. For a more elegant presentation add twigs of thyme and sliced olives to the pan.
