Here is a fun science experiment for youngsters that visually depicts the process in plants known as transpiration, which is the way that water moves through the leaves and stems of plants and evaporates. Only a small amount (about 2 percent) of water taken up by plants is used for growth and metabolic activities, with the remainder being expelled back into the environment.

This science experiment uses colored water to depict the movement of water through the celery stalks:

●     4 things you will need—6 celery stalks with leaves (the leaves are best for showing the colored water absorption); 6 small jars (tall enough to hold celery without tipping over); water; food coloring.

●     Mix the colored water in the jars—Fill the jars about halfway with water and then add your favorite colors. Do not use the green since that may not have sufficient contrast to show up against the green color of the celery.

●     Put one celery stalk in each jar

●     Leave overnight—Have the kids make observations and predictions about what might happen and then when they check on the celery the next day they will see that the color of the water that the celery was in has been absorbed throughout the stems and leaves!
